Guest Chef McChris Makes "Anna's Quesadillas"
One of our absolute favorite "eateries" in Boston is Anna's Taqueria. This little burrito and quesadilla place is by and far, the best (and cheapest) mexican place in Boston. Some people may have different opinions and I do realize food is subjective but oh. my. goodness. It's the best.
We went there so much when we lived in Boston that when we walked in the door, the chefs nodded at us and started on our regular order before we even got up to the counter (there was often a line). It never failed: we would order two chicken quesadillas and a chicken and cheese burrito.
We haven't been home to Boston since Christmas of 2008...that's a long time. We miss it!! So the other night Chris decided he was going to take a stab at making our favorite quesadilla.
It all started with some flour tortillas and american cheese.
Chris cooked up some chicken that had marinated in some spices. He then wrapped the cheese in the tortilla in an overlapped fold and fried it in some oil first - the same way Anna's does!
Fenway has never been to Annas! (Poor thing!)
It's a pretty simple meal, but perfection sometimes takes simplicity. Once the cheese is melted you open it back up and put the chicken and pico de gallo in....
Then wrap it up and seal it in foil...
Just like Anna's!
So we dug into these and gobbled them up so fast I never took a final photo of them. Suffice it to say they were delicious! I mean....delicious! Not quite like Anna's but as close as you can get without being there!
I have written to them to see if they will share some of their secrets - particularly what they marinate their chicken in... Haven't heard from them. Yet.
(In retrospect: we decided to research on the cheese and I found some Mexican "quesadilla cheese" that we will try on our next attempt.)
I'm thinking Chef McChris might need to change his name to Chef McCristobal (or something lika that! Arriba!)
